Where it All Began
The story of Jack’s Bistro starts in 2014 when Bobby Folse opened the very first Jack’s Café inside Lakeview Hospital, a small kiosk serving soups, salads, wraps, and paninis to hospital staff and visitors. It was a humble beginning, but the café quickly became known for fresh, comforting food and friendly service.
Before opening his own restaurants, Bobby spent years in the food and beverage industry working in popular bars and high-end restaurants in New Orleans. That experience, combined with a passion for hospitality and flavor, sparked the realization that he could do it himself and bring his own vision to life.
Two years later in 2016, Bobby expanded with Nan’s Café in Mandeville, named after his daughter Savannah. This sister restaurant focused on burgers, po’boys, and seafood, and it gave Bobby the chance to weave family recipes into the menu. Both restaurants carry family names, Jack’s for his son and Nan’s for his daughter.
A New Chapter
When the pandemic hit in 2020, Jack’s Cafe closed its doors and Bobby shifted focus to Nan’s while deciding what the next chapter for Jack’s would look like. It wasn’t the end of the story, just a pause.
Today, Jack’s Bistro returns with a renewed vision, blending the comfort and community it’s always been known for with the European-inspired flavors the Folse family fell in love with on their travels. Every plate has a little piece of that journey, and now it’s part of yours too.
